Luke Larsson is Head Chef of Northern Thai BBQ, Khao Bird. This gem of a restaurant, nestled in heart of London’s Borough Market, is inspired by the vibrancy of the open-air night markets in and around Chiang Mai. Luke has brought his extensive experience from the local street food scene as well as kitchens across Thailand.
His work is also shaped by his time in respected Thai kitchens like Samuay & Sons, 100 Mahaseth, and Bo.lan, where he developed a love for staff meals prepared together using beloved family recipes. Luke’s time in Bangkok and Northern Thailand instilled in him a deep respect for the history of Thai cuisine while emphasising the joy of bringing people together.
The menu at Khao Bird honours those who taught him, including Chef Chalee and Chef Num, while blending diverse influences into a playful fusion of flavours. The menu features regional dishes like Gai Yang (grilled marinated chicken) and Khao Soi (curry noodles), made with sustainably sourced British ingredients and Thai spices, offering a playful take on Northern Thailand’s favourite street-food snacks and traditional dishes.
Describe your perfect day in London?
I’ve moved to London from Brighton and am now based near Khao Bird – the restaurant above the Globe Tavern where I’m Head Chef – so it’s the area I’ve gotten to know the best. I’d start the morning at Borough Market for some tasty mortadella and stracciatella. It’s fun to browse through all the great food stalls and get inspired by the fresh ingredients. After a morning pottering around and snacking as I go, I’d make a quick pitstop at Kolae for a little lunch – they specialise in Southern Thai food (at Khao Bird, we lean more towards the North). Then I’d nip into Soho, have a couple of halves at The French House, and end up at The Toucan for a Guinness.
Favourite restaurant?
I’m a big fan of David Carter’s restaurants – Manteca is my top pick. The food is hearty and comforting whilst using bold flavours and an unpretentious touch. He’s just opened Agora and Oma opposite us in Borough which are both amazing too and always the loveliest gang working there!
Best place for brunch?
I love a greasy spoon! There’s a great one round the corner from where I live in Bermondsey called Al’s cafe.
What was the last museum or gallery you visited?
The Photographer’s Gallery always has some interesting, regularly changing exhibitions. They make great sandwiches and salads, which are reasonably priced in the cafe. It’s one of my favourite spots to sit and work when I’m doing admin and not in the kitchen. I also live very close to the White Cube gallery in Bermondsey, which has some great exhibitions on – and did you know they have beehives on the roof? Pretty cool!
Where are the best places to shop?
Shopping isn’t really my bag, but I do love all the markets, especially when they involve food, you can’t really beat Colombia Road on a Sunday followed by lunch at Cafe Cecilia – hearty and delicious!
Preferred bar or pub for a great night out?
The Toucan for a pint of Guinness after a busy shift!
Most relaxing place to unwind?
Hyde Park is my favourite spot to relax. It’s a peaceful escape from the city’s hustle and bustle, with lots of green space to clear my mind and recharge. Whether I’m by the Serpentine or taking a stroll, it’s a great place to find some calm.
If you had only one day in London, where would you visit?
It would have to be a food and drink tour! Stopping at all the above of course. There’s nothing better than eating and drinking your way through the day and collapsing on the sofa at the end or even better, a super comfy hotel bed!
What is your top London tip?
Explore the city’s lesser-known neighbourhoods like Bermondsey, there are some great little spots and lots to do, including the beer mile, of course.
Tell us what you are currently up to?
I head up the kitchen at Khao Bird, drawing inspiration from my experiences across Thailand. My regular research trips have taken me to the vibrant markets and street stalls of Northern Thailand.
At Khao Bird, I’m bringing these influences to life, honouring Thai cuisine’s authentic history while incorporating my own culinary background. My menu is a tribute to the chefs who taught me, as I bring together traditional dishes like laab and slow-cooked curries with a playful approach, using British seasonal ingredients, all largely sourced from our suppliers in Sussex to create Thai flavours.
