Ben Chamberlain has over eighteen years of experience working in professional kitchens, including The Jetty in Christchurch and as Head Chef at The Hut in Colwell Bay.
Influenced by Asian cuisines in particular, Ben has spent the last decade cooking over fire and has extensive experience in private dining. Now in his element at Wild, Ben works with the British Isles’ best produce and an estate garden on site to create innovative seasonal dishes cooked over fire.
Serving an 11-course tasting menu cooked live around guests, Wild combines global flavours with super-seasonal British produce, and seats just 10 guests around the fire pit for an intimate and immersive dining experience.
Ben took some time out of his busy schedule to tell us about his favourite things in London…
Describe your perfect day in London?
My partner and I head into London by train around midday. Lunch and then a wander at either Camden Market or Borough Market. Check into an Airbnb, then a few drinks somewhere that catches our eye before dinner.
Last time we went to Thirty7 in Covent Garden, then headed to Kiln, followed by a pint at The Devonshire. I like trying something new each time.
Favourite restaurant?
My favourite at the moment is Kiln. I love the energy and the loud music.
Best dish in London?
Best bite I’ve had in a while was the beef and sea urchin at Dorian. Properly sexy.
What was the last museum or gallery you visited?
The Science Museum, a long time ago now. Planning to visit the Natural History Museum soon with our three-year-old daughter, which should be great.
Where are the best places to shop?
I like wandering markets, or a bit of window shopping at Harrods.
Preferred bar or pub for a great night out?
I don’t spend loads of time in London, so I’m usually just looking for somewhere new. If I’m nearby, I’ll always pop into The Devonshire.
Most relaxing place to unwind?
I always seem to linger in the Outernet art installation on Charing Cross Road.
If you had only one day in London, where would you visit?
Hard one. I’m pretty much always in London to eat, but if I had to pick one area it would be Chinatown. You’re never stuck for good food. Kung Fu Burger is a win right now.
What is your top London tip?
Book one insane meal. Let the rest be simple finds.
Tell us what you are currently up to?
I’m running Wild at The Bull Hotel in Burford. Cooking, hosting, and building a small, fire-led tasting experience. Keeping it tight, seasonal, and very hands-on.
